The ingredients needed to make Achari Gobhi:
  1. Prepare 1 Medium Cauliflower (Cut into small florets)
  2. Take 5 tbsp Oil
  3. Make ready 1 cup Onion (Chopped)
  4. Prepare 2 tsp Ginger Garlic Paste
  5. Get 4 tbsp Tomato Puree
  6. Get 4 tbsp Curd
  7. Get 2 tbsp Achari Masala
  8. Take 1 tbsp Kashmiri Red Chilli Powder
  9. Prepare as per taste Salt
  10. Make ready 1 tbsp Lemon Juice
  11. Take 1 tsp Dry Mango Powder
  12. Get 2 tbsp Coriander Leaves (Chopped)
  13. Get Achari Masala Recipe:
  14. Prepare 16-18 Kashmiri Dry Red Chillies
  15. Get 2 tbsp Coriander Seeds
  16. Get 2 tsp Onion Seeds
  17. Get 6 tbsp Fennel Seeds
  18. Make ready 4 tbsp Mustard Seeds
  19. Prepare 1 tsp Fenugreek Seeds
  20. Take 6 tbsp Cumin Seeds
  21. Get 4 tbsp Salt
  22. Get 1 tsp Turmeric Powder
  23. Get 1 tsp Hing
  24. Take 4 tsp Dry Mango Powder
Steps to make Achari Gobhi:
  1. Heat 2 tablespoons oil in a pan. Add the washed and drained gobhi florets and saute till slightly brown. Remove from the pan and set aside.
  2. Add the remaining oil in the same pan. Add the onions and saute till slightly brown.
  3. Add the ginger garlic paste and saute for a minute.
  4. Add the tomato puree and curd and saute for a minute.
  5. Add the achari masala, red chilli powder, salt and half cup of water and saute for a minute. (Since I was putting kashmiri red chilli powder, dry mango powder and salt in the recipe, I deleted it when making the achari masala). You can prepare the achari masala as per the recipe given above and store it and use when required. You can use it in dal and curries too.
  6. Add the fried gobhi. Cover and cook for about 10 to 12 minutes.
  7. Add lemon juice and dry mango powder. Mix it well.
  8. Garnish with coriander leaves.
  9. Serve hot with rice, dal or roti, paratha, naan etc.
