  4. Put the sweet potato mix in a blender. Add the spinach, coriander, lemon juice and cayenne. Blitz until smooth. If using a hand blender, take the pan off the heat, add everything and then blend.
  5. Taste - season as needed and maybe add another pinch of cayenne. Enjoy 😋

This recipe is the BEST soup I've ever had in my life! So I have used instead: curry powder, dried coriander, and fresh parsley at the end - AMAZING! This delicious vegan curry dish with sweet potatoes, chickpeas, spinach, and coconut milk is seasoned with Indian spices like garam masala I didn t have turmeric so I used curry powder. Doubled the spinach and it turned out great! Super easy and just the right amount of spice.
