Get 1/2 cup oil
Take 2 tsp Finely chopped garlic
Prepare 2 tsp Finely chopped ginger
Prepare 1/2 tsp red chilli flakes

Make ready 2 tbsp Finely chopped garlic
Prepare 1 tbsp soy sauce
Prepare to taste Salt
Prepare 1 tbsp green Chilli Finely chopped
Get 2 tbsp oil
Take 1 medium size carrot thinly sliced
Make ready 1/2 cup corn kernels
Take 1/2 cup green peas
Take 1/2 cup spring onion greens
Get 1/2 cup spring onion whites
Get 1/2 cup coriander leaves
Make ready As needed- Around a litre of water
Get 2 tsp all-purpose flour + 2 tsp water for making slurry
Instructions to make Veg Wonton Soup With Spicy Chilli Garlic Oil:
For Wonton Wrappers or sheet mix all the wonton wrappers ingredients and Knead a soft but stiff dough and keep it aside for 30 minutes to rest.
For the filling chop all the ingredients mentioned for filling either manually or in a food processor then mix all the spices mentioned above and mix well. The filling is ready.
For the chilli oil mix up all the above-mentioned ingredients for chilli oil in a bowl except oil. Heat oil in a pan to the smoking point then add in the bowl of ingredients mix it really well and keep it aside to absorb all the juices of the in ingredients and become flavourful.
For the soup heat up oil in a pan then add garlic and salt saute for a while then add the green chillies. Then add all the above-mentioned veggies for soup except coriander leaves and cook it on a high flame for 2-3 minutes then add water and mix well. Once the water start boiling add soy sauce and mix well. Make a slurry of all-purpose flour and water and add to the soup and mix. Boil it until you desired consistency then off the flame. Taste and adjust the flavours.
For making wonton sheets make 4 balls from the dough. Roll out one dough to a thin disc. It should be soo thin that you can see your finger through it. Cut the rolled disc in square shape. Now cut 9 equal squares from that big square and Wonton sheets are ready. You can store then in the freezer for upto 3 months placing cling film in between every sheet and keeping it in an air tight container.
For Preparing the wontons take a wonton sheet add 1 tsp of filling in the middle. Now apply water on all the sides and fold it in a triangle shape. Now again apply water on the 2 opposite sides of the triangle and stick over just like a bird wing. Like so make all the wontons.
For cooking the wontons heat up enough water in a pan so that the wontons can float. Once the water starts boiling add the wontons to it. Don't overlap. At first they will sink at the bottom but as they will cook up they will start floating. Take them out and like so cook all the prepared wontons.
There are 4 ways to serve 1. Serve as it is. 2. Serve with prepared flavourful oil. 3. Serve with prepared soup. 4. Serve with all the above-mentioned.
For assembling in a soup plate put 5-6 wontons to it add 2-3 ladle full of soup. Add around a tsp of flavoured oil or as per taste. Sprinkle some coriander leaves. Serve piping hot.
