The ingredients needed to make Veg Manchurian:
  1. Take For Manchurian balls-
  2. Make ready 1 cup cauliflower grated
  3. Make ready 2 carrots grated
  4. Take 1 capsicum chopped
  5. Prepare 1 spoon cornflour
  6. Get 1 spoon maida
  7. Get 1 spoon salt
  8. Prepare 1/4 spoon red chilli powder
  9. Make ready Pinch baking soda
  10. Get as required Oil for frying
  11. Make ready For Gravy-
  12. Get 1/2 capsicum julienne
  13. Take 1 carrot julienne
  14. Make ready 1 inch ginger chopped
  15. Get 1 spring onion chopped
  16. Prepare 4-5 garlic cloves chopped
  17. Take 2 green chillies, chopped
  18. Make ready as required Water
  19. Take to taste Salt
  20. Prepare 1/2 black pepper powder
  21. Get 1 spoon soya sauce
  22. Make ready 1 tsp ketchup
  23. Prepare 1 tsp green chilli sause
  24. Prepare 1/2 tsp vinegar
  25. Make ready 1 tsp cornflour
  26. Get 1/2 bowl water
  27. Prepare as required Green onion to garnish
Instructions to make Veg Manchurian:
  1. Grate and chop the veggies then mix in a mixing bowl. Add salt and leave it covered for 10 minutes. After 10 minutes strain all the water from veggies using a strainer or a cloth. In a bowl add maida, cornflour, chilli powder and baking soda. Mix well and knead a smooth dough. Divide this dough into equal parts.
  2. Deep fry these dough balls in oil on medium flame till they acquire a golden hue. Now get them out and fry once more on high flame for a few seconds till they get a crust around them.
  3. For gravy take another pan and add 2 spoons oil in it. once heated add ginger, garlic and green chillies. Once sauted add green onions. Cook for a minute on high flame then add carrot Julian saute them for a minute then add capsicum julienne.
  4. Cook veggies for a minute then add salt, black pepper powder, soya sauce, ketchup, chilli sauce and mix really well. Add water as required to make gravy. Add fried Manchurian balls and cook till they absorb all the flavor in them. Now in a bowl add 1 spoon cornflour and add water to it. Mix well to form a slurry. Add this slurry to Manchurian to help thicken the gravy.
  5. Garnish the manchurian with green onions and serve them with rice, chapati or noodles or can enjoy them as a snack.
