  1. Sort rice if dirty. Squeeze inside of coconut and make water out of it. Place coconut water in sauce pan and over heat.
  2. Let boil to your desire. Wash rice and set aside. Put salt snd oil and cook rice.
  3. Boil Lentils till ready.
  4. Prepare your ingredients by washing, peeling and grating ready for cooking.
  5. In a saucepan, fry onions in oil. Add ginger, garlic paste. Put tomatoes and hohos. Let mix. Add grated carrots. Let it mix through.
  6. Add lentils to the mixture. Let it simmer. Add salt to your desire and knorr spice. Taste to adjust any seasonings. Garnish with coriander.
  7. Serve while hot. Yummy

So, I started thinking that if cooking rice in coconut milk was so good, maybe cooking lentils in coconut milk would be too? It sure was! **It's very important to note that red lentils are different in texture than green or brown lentils. They break down much more and cook faster than the other two. Heat the lentils as per the packet instructions and toss through the cooked rice, along with the drained cucumber. Spoon the rice onto a large serving platter and top with the asparagus and soft-boiled eggs.
