The ingredients needed to make Edamame Fried Rice:
  1. Get 2 plates brown rice (leftover rice, put it in the refrigerator over night, is recommended)
  2. Prepare 2 Tbsp vegetable oil
  3. Take 150 gr edamame
  4. Take 1 big carrot, diced
  5. Make ready 1/4 onion, minced
  6. Prepare 2 cloves garlic, minced
  7. Take 2 Tbsp soy sauce salt (if necessary) and white pepper powder (to taste)

  9. Take 1 pack seasoned roasted nori seaweed, cut into small pieces

  12. Prepare 2 Tbsp milk/water
  13. Make ready salt and pepper (to taste)
  14. Get 1 Tbsp vegetable oil

Push the rice mixture to one side, add the eggs, and cook, stirring occasionally with a rubber spatula, until almost. Here, we've replaced them with shelled edamame. Because it's a great source of protein, this also makes a wonderful vegetarian meal. This Edamame fried rice is perfect on so many levels.

Instructions to make Edamame Fried Rice:
  1. For the fluffy scrambled eggs: In a bowl, mix together eggs, milk/water, salt, and pepper until well combined.
  2. Heat vegetable oil over medium low-high heat. Pour the eggs mixture. Wait around 10 seconds. With a spatula, pull the cooked outer edges o the center of the eggs. Do this to the rest of the eggs. Turn the eggs and begin to break them into small pieces. Remove from the heat. Set aside. (Don’t fry the eggs too long as it will make them hard.)
  3. For the fried rice: Heat the vegetable oil over medium-high heat. - Sauté onion and garlic until fragrant.
  4. Add carrot. Stir until the carrot is half cooked.
  5. Add rice, edamame, soy sauce, salt, and pepper. Stir well.
  6. Add sesame oil. Mix again. Remove from the heat.
  7. Place the fried rice on serving plates. Top with scramble eggs and seasoned roasted nori seaweed.
