To get started with this recipe, we must prepare a few ingredients. You can have malai dhokla using 18 ingredients and 6 steps. Here is how you can achieve it.
The ingredients needed to make Malai Dhokla:
Prepare 1 cup Khatta dhokla flour
Make ready 1/2-3/4 cup sour curd(as required)
Get 1 tbsp green chillies ginger paste
Get to taste Salt
Make ready 1 tbsp fresh malai (cream layer from top of milk)
Make ready 1 pinch asafoetida (hing)
Get 1/4 tsp soda bi carb
Get As required Black pepper powder and red chilli powder
Prepare As required Red chilli powder
Take For tempering/ tadka
Take 1 tbsp oil
Take 1/4 tsp mustard seeds
Get 1/4 tsp cummin seeds
Get 1/4 tsp Jeera
Prepare 1/4 tsp white sesame seeds
Take 3-4 curry leaves
Take As required Finely chopped fresh coriander leaves to garnish
Make ready As per taste Green coriander chutney to serve with Malai Dhokla
Instructions to make Malai Dhokla:
In khatta dhokla flour, mix curd as required to make a little thick batter. Cover and ferment for 6-8 hours. In fermented batter add salt, green chillies, ginger paste and asafoetida. Mix well.
Add fresh malai/ cream and soda bi carb in this batter. Mix well.
In big vessel for steaming dhokla, add enough water. Keep on Gas to heat up. Grease 6"-7" round thali with oil. Pour prepared dhokla batter in it. Sprinkle a big pinch of black pepper powder and red chilli powder on it. Place this thali on stand kept in water filled vessel for steaming. Cover and steam on high flame for 20 -25 minutes.
In small tadka pan add heat oil. Add mustard, cumin and sesame seeds as they splutter add curry leaves and turn off the flame. Pour this tadka on prepared steamed Malai Dhokla. Garnish with chopped coriander leaves.
Serve/ Relish Delicious Malai Dhokla with Green Coriander Chutney.
Tip, I have use ready available khatta dhokla flour. If you want to make at home or grind outside, then take 1 cup rice, 1/4 cup urad dal and 2 tbsp chanadal. Mix all three and grind to coarse flour.(Like rawa).
