The ingredients needed to make Veggie Quinoa:
  1. Take 1/2 cup quinoa soaked for 1/2 an hour
  2. Prepare As required veggies like beans, capsicum, corn and baby spinach
  3. Get 1 tbsp chopped onion and tomato
  4. Get 1/2 tsp salt
  5. Prepare 1/2 tsp black pepper powder
  6. Prepare 1/4 tsp roasted cumin powder
  7. Make ready 1/2 lemon juice
  8. Prepare 1 tsp desi ghee
  9. Take As required Chopped coriander leaves
Instructions to make Veggie Quinoa:
  1. Boil water and add salt and quinoa. When done, strain. Water can be used in soup or gravy
  2. Heat pan add veggies and saute for 5 mins on high flame.
  3. Add strained quinoa and mix.
  4. Sprinkle black pepper, roasted cumin and lemon juice and mix.
  5. Garnish with chopped onion, tomato and coriander leaves.
  6. Enjoy the healthy quinoa
