To make REFRIED BEANS(1/2), - 1. Heat olive oil and butter in the pan. Add garlic and finely chopped onion to it. Sauté it for 1-2 minutes or until the raw smell is gone. - - 2. Add tomato purée/coarsely chopped tomatoes, rajma, salt, sugar, kashmiri red chilli powder, coriander-cumin powder and ketch up. Mix it well and cook on a low flame for about 10 minutes or until you get desired thickness.
To make REFRIED BEANS(2/2), - 3. Take it off the flame and add lemon juice and coriander. - - 4. Once cools down completely, store it in an airtight container. It remains fresh for 7-10 days when stored in refrigerator and a month when stored in freezer.
To make SOUR CREAM, - 1. In a large bowl, whisk together cooking cream and curd until you get nice smooth texture. - - 2. Add lemon juice to the bowl, whisk again. - - 3. Add black pepper, salt, parsley and mix well. - - 4. Serve chilled.
To make NACHOS(1/2), - 1. Heat water in a pan. Add baking soda and turmeric powder when it starts to simmer. - - 2. Then, add maize flour and fold well. Turn off the flame and keep it aside for about 12 minutes. - - 3. Once It has cooled down partially, add all-purpose flour, salt and pepper, and knead a soft dough(crackfree).
To make NACHOS(2/2), - 4. Take small portion of a dough between two plastic sheets and roll it into a thin tortilla. - Tip- Apply some oil on plastic sheets before you start rolling. - Tip- Use papad maker, if available. - - 5. Then, cut it into triangular pieces. Prick them with a fork and deep fry OR bake them at 180 C until crisp.
To make PIZZA BASE(1/2), - 1. In a large bowl, wheat flour, olive oil, salt, baking powder and baking soda. Gradually add the curd and knead a soft dough; let rest for 15 minutes. - - 2. Take old kadhai, take about 1/2 kg salt in it. Place metal ring in the center and put steel plate above it. Cover it and preheat on a high flame for about 15 minutes.
To make PIZZA BASE(2/2), - 3. Divide the dough into 4 portions(120 gm each) and roll it to 2-3 mm thickness. Prick the pizza base so that it doesn’t inflate. - Tip: To obtain crispy crust, use semolina/all-purpose flour for dusting. - - 4. Once kadai is preheated enough, brush steel plate with some oil and bake pizza for about 12 minutes. Repeat the process for rest.
To ASSEMBLE, - 1. Spread some pizza sauce on the base, add some mozzarella+cheddar cheese on it. - - 2. Top it with, refried beans, olives, capsicum, corn, tomatoes, onion, green chilli and coriander. Cook in a pan on a law flame for about 12 minutes, covered till cheese melts. - - 3.
