Instructions to make Light, Refreshing Potato Salad - Vegan:
  1. Cut potatoes into 1/2 inch cubes.
  2. Steam potatoes over small amount of water in a steamer in a medium pot.
  3. If you don't have a steamer (a few dollars at Walmart and the likes), cook potatoes whole, preferably unpeeled, and then peel and cube.
  4. Drain potatoes. While they cool slightly, you can cut the pickles and spring onions.
  5. In a medium bowl, mix all ingredients. Taste and add salt and pepper to taste.
  6. Enjoy!

I think the main reason for my craving is the It doesn't use any oil (or mayo either, obviously) so it's a perfect light dish if you're looking to keep the 'Oversalt' the potatoes while boiling - the potatoes need a lot of salt to get full flavour out of them. This vegan potato salad is light, bright, and delicious! Not only is this vegan potato salad delicious, but it is easy to make.
