Quinoa "Fried Rice" is one of the most popular of current trending foods in the world. It is simple, it is quick, it tastes yummy. It is enjoyed by millions daily. They’re fine and they look wonderful. Quinoa "Fried Rice" is something that I have loved my entire life.

The ingredients needed to make Quinoa "Fried Rice":
  1. Prepare 1 cup quinoa rinsed and drained
  2. Get 1 zucchini, diced
  3. Prepare 1/2 cup sliced mushrooms
  4. Prepare 3/4 cup frozen veggie mix (corn,peas,carrots etc)
  5. Make ready 2 eggs
  6. Take 2 tbsp soya sauce
  7. Make ready 1/2 tsp fish sauce (optional)
  8. Prepare chopped parsley (optional)
  9. Take 1 tsp olive oil, extra virgin
  10. Make ready 1 small onion, diced small
  11. Prepare 2 garlic cloves, minced
  12. Get salt and pepper
Steps to make Quinoa "Fried Rice":
  1. In a pot, cook quinoa for about 15-20 min or until cooked and add the frozen veggies in the last 5 min of cooking time and set aside.
  2. While quinoa is cooking, heat a non stick pan and cook eggs (scrambled) remove from pan and set aside
  3. Add oil to pan and cook garlic and onions until translucent.
  4. Add your mushrooms to the pan, cook for another 3 min.
  5. Then add your zucchini, and stir fry another 3 min (I like my zucchini still crisp so I don't usually cook it for long, but you can cook longer if you'd like)
  6. Add your cooked quinoa and mixed veggies to the pan, mix. . Then add the scrambled eggs into the pan.
  7. Add your soya sauce, fish sauce (if using) and salt and pepper to taste. Mix all together. Let sit for 5 min for everything to mingle then serve 😊
  8. Sprinkle with parsley to garnish (optional)
